This is another family favorite here, and it wouldn't be Christmas without these. Easy to make, they keep very well, and are handy for quick gifts...
2 pounds each, Pecan Halves, Whole Raw Almonds, Whole Raw Hazelnuts, Raw Spanish Peanuts, Walnut Pieces
2 T Butter
2 C Dark Brown Sugar
1 C Honey
Juice of 4 Oranges
Zest of 2 Oranges
2 T Chinese Five Spice Powder
Heat the oven to 375 degrees.
Mix the nuts together in a large SS Bowl ( I use 2 bowls for easier mixing).
Combine the butter, Sugar, Honey and Orange Juice in a saucepan and bring to a boil over medium heat, stirring constantly to dissolve the sugar. Remove from the heat. Add the zest, and the spice powder. Stir well to break up any clumps of spice and zest.
Pour the hot liquid over the nuts and stir well to be sure everything is well coated. the sauce is thin and will tend to settle to the bottom, so stir all the way to the bottom of the bowl. Pour the mixture out onto a pair of large flat cake pans, spreading the mix out evenly.
Roast in the oven until done, about 1 hour. You will have to stir the nuts a few times while they are cooking to be sure the nuts roast evenly, and to recoat with the syrup that settles to the bottom of the pan. Your nose will tell you when the nuts are done; they should be evenly brown, very fragrant, and covered with a thin shell of sticky candy.
Lay down several sheets of newspaper on the counter, and put a pair of cooling racks on the paper. Turn the roasted nuts out on the cooling racks, and spread them out. Let them cool until they can be handled. You will find that the candy shell gets quite hard, and the nuts will want to stick together. Simply break them apart with your fingers, and store in an airtight container.
