This is another mandatory item on our menu, and I court an armed insurrection if I don't make this one too...
2 pounds (8 pkgs) Cream Cheese
2 T (at least) high quality Hot Sauce; like "Cajun Sunshine"
2 bunches green onions, cleaned and small dice
1 pound (about 3 packs) smoked peppered salmon, broken into small pieces, deskinned, and deboned. (I use Tony's from Oregon City, available at Winco in a gold-foil pack. I accept no substitute)
Put all of the cheese and the hotsauce into the mixer, install the paddle, and beat on high until the cream cheese is smooth, fluffy and the hotsauce blended in well. Add the chopped onions and continue to blend. Stop often, and scape down the sides of the bowl with a spat.
Add the salmon and beat it in thoroughly, and until all of the pieces are well distributed and coated with cheese.
Turn the mix out into a glass bowl, cover tightly with plastic wrap, and allow to sit in the refrigerator at least over night, a couple of days is even better. Serve with crackers, and don't get between your guests and this dip...
