Chief’s Chocolate Decadence Cookies
8 oz Milk Chocolate
1 # Dark Chocolate
3 oz Butter
12 oz granulated sugar
5 Eggs
1/8 C Espresso
1 Tsp Vanilla Extract
3 oz Cake Flour
2 Tsp Baking Powder
1 Tsp Salt
8 Oz Dark Chocolate Chips
8 Oz White Chocolate Chips
8 oz roasted Hazelnuts, coarsely chopped
In a double boiler, melt the chocolate and the butter, reserve.
In a mixer, using the paddle, cream the butter and sugar. Add the melted chocolate and blend thoroughly. Add the remaining dry ingredients one at a time, and continue blending.
Lay out a length of saran wrap on the counter. Turn out the cookie batter in a lone about three inches wide along the length of the wrap. Roll the cookie dough into a log, using the wrap, and smoothing/evening it out as you go. Place the rolled log in the freezer overnight.
Preheat the oven to 375 degrees.
Remove the plastic wrap from the frozen log of dough. Slice the log into ¾” thick pieces, and place them on a greased cookie sheet, or on a parchment liner. Bake until done, about 12 minutes.
