View Full Version : Cuban Style Mojo Marinade

5 lbs ripe limes

6 ripe oranges

1 large bunch fresh cilantro

too much garlic, chopped (you'll need at least 2 cups packed of chopped garlic)

Juece the lemons and oranges, reserve. Chop the green portions of the cilantro and add to the juice. Chop the garlic and akdd all of it to the juice. This should render about 1/2 gallon of liquid.

I am marinating a pair of nice flank steaks in this, to be grilled off tomorrow afternoon. This marinade is exceelent for any kind of meat. The high level of citric acid will tenderize even the mose inexpensive cut of meat, and adds incredible flavor to chicken.

This is going to marinate until tomorrow afternoon, and I'll grill it off then. I get my cast iron smokin' hot over charcoal, season the grate, and sear sone nice grll marks into the flanksteaks. I use the remaining marinade to mop them after turning so that they stay nice ans moist.

I usually slice it on a sharp bias into thin sliices, and will probably do a batch of flatbreads to go with it since the grill will be hot...

Ever do seasoned flatbread on the grill itself?? Works like a champ and they taste great!
